Our approach focuses on responsible sourcing, minimising waste, and supporting ethical suppliers while maintaining the highest standards of service.

Our kitchen team works with trusted UK suppliers who prioritise regenerative agriculture, sustainable fishing, and high animal welfare standards. We source free-range eggs, sustainable soya, and responsibly caught fish, avoiding palm oil and other ingredients linked to deforestation. By working directly with growers and producers, we support ethical supply chains that uphold fair labour practices and combat modern slavery.

We design our menus with sustainability in mind, using seasonal British produce to lower food miles and reduce our carbon footprint. Carbon labelling is being explored to provide transparency on the environmental impact of our dishes. We also work towards net-zero targets by cutting waste, improving energy efficiency, and choosing suppliers who use green technology.

Our commitment to waste reduction includes minimising single-use plastics, using biodegradable packaging where possible, and recycling effectively. We embrace a circular economy approach, ensuring that resources are used efficiently and waste is repurposed or composted wherever possible.

We actively reduce food waste through careful menu planning, portion control, and surplus donation schemes. By supporting regenerative farming, we also contribute to healthier ecosystems, encouraging biodiversity and improving soil health for long-term environmental benefits.
